Sweetener agents are used to impart sweetness to food products, satisfying consumer taste preferences. Based on their origin, sweeteners can be classified into natural sweeteners and artificial sweeteners. Natural sweeteners include ingredients such as mogroside extract (from monk fruit), licorice extract, steviol glycosides (from stevia), sodium glycyrrhizinate, as well as various sugar alcohols like sorbitol, mannitol, maltitol, and maltitol syrup. Artificial sweeteners include substances such as saccharin, sodium saccharin, aspartame, sucralose, acesulfame potassium (Ace-K), and neotame. Currently, 26 types of sweetener agents are officially approved as food additives in Taiwan. The sweetness level of sweeteners cannot yet be determined using physical or chemical methods.
